Polenta little cake, covered with a quinoa stew, sautéed kale, our wide range of vegetables, cooked with diferent techniques. This is a very colorful dish and full of textures on the palate. (180 gr.)

Served with arugula salad, cherry tomatoes and basil pesto. (180 gr.)

SUCKLING PIG TACOS - $450.00

The suckling pig is cooked for 12 hours with olive oil, later it is browned, the tortillas for the tacos are made of blue corn. Served with Chicatana ant sauce. I suggest don't ask for the sauce on the side, the combination is something very interesting. (160 gr.)

BEEF CARPACCIO - $300.00

With arugula salad, parmesan cheese.

These tacos are inspired by checa tacos, but these have foie gras. With caramelized onion and rib eye. This is an iconic dish of Cedrón. (180 gr.)

Prepared at home, cured in salt in the Nordic style, accompanied with vegetables and arugula. (100 gr.)

ONION SOUP - $250.00

My 8-year stay at the famous Au Pied de Cochon restaurant made me learn this recipe. We put Raclette cheese in it and the broth is only vegetable, the color is due to many hours of being on the fire. (200 ml.)

ROASTED TOMATO SOUP - $200.00

Accompanied by crouton with goat cheese. (200 ml.)

SEAFOOD SOUP - $280.00

The broth is made with shrimp, fish and crab. In 2018, the great journalist Jorge Toledo (RIP), he put this soup in his list of the best things he had eaten that year, a sign of pride for me. (200 ml.)

With roasted beet in olive oil, sweet potato, fresh goat cheese, red wine vinaigrette and mix of lettuce. (180 gr.)

My mashed potatoes are inspired by the recipe of the famous chef Joel Reblochon, which I learned at the Ritz hotel in Paris, their consistency is velvety, they have given me many applauses. (200 gr.)

SHORT RIB - $800.00

This dish has been with me since the opening of Cedrón, A meat that is marinated for 3 days in red wine and baked overnight. The price has to do with the price rise, not with the fame of the dish. If you are a meat lover, I highly recommend it. (160 gr.)

BRAISED BEEF CHEEK - $600.00

The jewel of the menu, where the experience of the cook behind the Cedrón stove can be appreciated. (160 gr.)

BEEF FILET - $650.00

Cooked in a pan with rosemary, accompanied by red wine sauce, French cuisine is famous for its sauces and this is one of them. The meat is accompanied by our famous mashed potatoes, but you can also change it with French fries, spinach or vegetables. (180 gr.)

DUCK CONFIT, LEG AND THIGH - $600.00

Imported from France, accompanied by gratin potatoes and salad. (170 gr.)

Eating is a ritual. The diference between an exquisite meal and an average one is the time it takes to prepare the dish. Therefore, in this house cooking is an art that takes time. Do not be impatient and let us serve you a pleasant experience.

Note: Table wine corkage service is $600 pesos, 760 ml bottles. Thank you so much. On holidays, a cooperation fee of $80 pesos per personwill be charged, as it is a holiday.
