Since I opened Cedrón on February 14, 2017, up to today's date, I have taken it upon myself to do the shopping in the early hours. I go to the Nueva Viga and La Central de Abastos to ensure that I buy the freshest fish and newly harvested vegetables. For me, the ingredient is the most important thing, and we take care of it until it reaches the table. I use olive oil in all my preparations, along with herbs and salt from Colima. I do not use any type of chemical additives.
